how can I change the album viewing permissions default so only registered users can see any albums? Whenever I add an album now, I have to remember to change viewing permissions so only registered users can view the files - and I keep forgetting!

Set "Allow unlogged users (guest or anonymous) access" to "no" and you should be fine.
