One of our galleries had detailed stats enabled and of course now we have an insanely large database. Is it safe for me to delete all lines in the table _hit_stats ? I would like to keep the "album view" stats if possible.

Yes, but as always make sure you backup first. If you search the forums there are many threads regarding removing detailed stats.
It is a mistake to think you can solve any major problems just with potatoes.
