Hey there... how do I get the theme I am using on my IPB 2.0 board to show up on my CPG gallery?

You don't. Coppermine can only use themes that are writen for Coppermine.

Bummer.... do you know of a theme that is similar to the IPB vanillacola theme by any chance?

Browse through the themes available on the demo (http://coppermine.sourceforge.net/demo/). You can grab them from the downloads section.
