Having a thumbnail represent the user galleries section has been requested before, but is currently not possibly (no matter what theme you use).
To edit the title and description of the "user gallery", just go to category manager, click the "edit" icon next to the category, wait for the page to reload, scroll to the bottom of the page, change the text as you see fit and save your changes.
I was looking right at the e button and couldn't see it, guess I need new glasses.
