I need to delete a category I created on accident, and since there is no docs on it, and I'm new, I really need something soon.

Use the category manager (http://coppermine-gallery.net/demo/cpg14x/docs/index.htm#cat_cp) (the place where you created the category in the first place). Surprisingly, the "x" icon allows you to delete a category.
