I have a site with the name Youth Sport Foto's.
Wherever I use the ' (especially in mass mail) i get a ' like in Youth Sport Foto's
How do I fix this ?

Where exactly do you have issues with the apostroph being converted into ' ?
Coppermine doesn't come with a mass mail feature - you must be using some custom mod for this purpose: ask the creator of that mod for support.

I use the Newsletter / Massmail plugin.
But with this plug in as well as the emails from admin to user (during verification of registration) i get the same funny thing.

In the email when registering it's doing the funny thing ...
Have you run versioncheck? Speaking of it, have you properly upgraded, installed a lot of mods, which ones etc
I remember older versions having that issue but that has been fixed (talking to myself: with sanitizing )
