We have had coppermine running a couple of weeks fine with the latest installation, and were just getting around to customizing it @ www.peifffa.com/coppermine. Added a line in the config manager to have a custom header which apparently was quite wrong. Now when we access the site we only get.

What file to we edit to remove the custom code, or set everything back to default and start again?

Not related to themeing. Use a third party database manipulation tool like phpMyAdmin to edit coppermine's config table and correct the improper custom header/footer entry.
