I have 2 domains set up at 1 hosting site. Is it possible to install 2 Coppermines so the galleries are separate.
It was done at the last hosting company but I don't know how they did it.
Sure. Just upload them in 2 different directories and use 2 different databases (or at least a different table prefix).
