how I can deny the possibility to unload the photos to the customers?

By "unload", do you mean "how do I disallow users to delete pics they uploaded"? If yes, then RTFM: Allow users to retain control over their pics in public galleries. If this is not what you had in mind, post more details, and try to use coppermine/web terms ("unload" is not the opposite of "upload").

 I wanted to understand if there is the possibility not to make protect the file, not to download the file for the visitor.

If a file is displayed in a visitors browser, it already has been downloaded. That's the way the www works. No workaround existing, only some lame tricks that deal with disabling right-clicks for newbies. Don't put stuff on the internet that you're afraid of others might steal it. Second best bet is to watermark your pics.
Third best bet is to only allow visitors you trust to access your pics - there are many ways to do so (registration/group membership(album passwords) - read the docs on those issues.
