I had the coppermine gallery through Hostmonster but have cancelled the account.  I would like to keep the Coppermine Gallery - how do I go about doing this?

They cancelled your account for what reason? Anyway if you want keep the gallery and its content just kindly ask them to give you the oppurtunity to download it before they shutdown your account.

In fact it doesn't matter much who performed the install. Perform the actions that are described in the FAQ and in many postings on this forum, where people asked how to move a gallery from one server to the other. You need a backup of the files as well as a backup (dump) of the database.
