Ok - I have been through the docs and still can't see how to do what I need.
As an example:

I have two groups and two albums (I don't think catagories matter)
- I want to allow group A to upload to public album A
- I want to allow group B to upload to public album B
- I do not want to allow group A members to be able to upload to album B
- I do not want to allow group B members to be able to upload to album A

I am sure I am being slow and this must be possible but all I can achieve is that if I set 'Visitors can upload files=YES' for Album A then anybody from ANY group with 'Public albums upload=YES' would be able to upload to Album A

I have searched for 'assigned album(s)' and 'This group has no special access' in the docs but can't find any mention.

Any help would be greatly appreciated.

I'm sorry, this isn't possible. Coppermine doesn't have a permissions system that granular yet.
The only workaround is to only allow Group a to view Album A and and to allow Group B to view album B. Those two albums subsequently wouldn't be viewable by the public any longer, but only by members of those groups (as Coppermine is set up to only allow users to upload to albums they are allowed to view in the first place).
More granular permissions have been requested often and are being considered for the future, but currently aren't available yet, sorry.
