I'd like to change my mysql password, but when I tried I kept getting a critical error. My gallery is bridged with invision and I edited the bridge file and include/config.inc.php with the new password and it still gave me errors.

MySQL said: Access denied for user: 'xxxx@localhost' (Using password: YES)

Edit: Is there another file that maybe I'm forgetting to edit?

you will have to edit a mySQL config file used by your bbs as well. I don't know how ipb works, but they surely have a file named config.php or similar as well.

Well of course, I've had no problems with changing the password for the forums, it was actually conf_global.php , but even with that changed and the other two cpg files changed I was getting this error.

If I disable forum bridging in init.inc.php and renable it with the other files modified with the new password... what effect will it have on the information already stored in my db (like comments, ratings, views etc.).

None - it's safe to temporarily disable bridging (by adding the two commenting slashes in front of the line in include/init.inc.php), fixing the stuff that needs fixing (edit include/config.inc.php) and then re-enabling bridging once more. Nothing will happen to the stuff in your db, no pics/comments/ratings will be lost.
