I have the gallery set up so that there are different categories to post images into.

However, I would like a copy of everything uploaded into a category gallery to also automatically be put into a gallery for that individual user...or, at least, for the user to be able to upload to more than one gallery of choice at once, OR be able to edit an image into a second category once uploaded...so that anyone can go to the user galleries and click on someone's name and see all contributions by person, not just by category. I don't want everyone to have to upload each image two times to get it in two albums.

Haven't been able to find a setting for uploading to more than one album at a time, or for copying an image already uploaded into a secondary album - how could I configure it to work this way?

Uploads never go into categories, but into albums. Permissions are being assigned by album as well (not by category), so I can't see the point of your posting. Use the keywords feature to have uploaded pics appear in multiple albums. Review the docs for details.
Your issue is not related to uploads, but to permissions, so I'm moving your thread accordingly.

Thank you. Once you let me know this issue is solved with 'keywords' in Coppermine, I was able to do a search and find a helpful answer you had posted in this thread:

That gave me just the information I needed. 

I'm sorry that my description of an album as a 'category album' (as opposed to a user album) was confusing to you. I'm learning how to use the terminology as I go.
