Sorry if this has been discussed and answered .. no luck with search here or on google

Can you install coppermine once and run several galleries off of it?

I use a few galleries and it would be nice to save the space instead of having to install it several times

ex.
coppermineinstall1.com
coppermineinstall2.com
coppermineinstall3.com

All using the same install

If all three domains are hosted on the same server: yes. Otherwise: no.

No, there are no instructions, and it is rather hard to accomplish. In fact you perform an install for one gallery and then you just create a symlink on the other domains that points to the coppermine core files. I haven't looked into this. What yre you actually trying to accomplish. Wouldn't it be easier to just set up redirectors or use different themes, based on where your users come from?

I have two separte galleries .. one is my wife's photography stuff and one is pictures of our cabin
I would like to be able to have both galleries running under one install .. instead of two separate installs
Basically, I would just like to conserve some space instead of having to install all the core files multiple times to run these two and possibly more in the future
Was hoping there was a possible way

Well, if the stuff you upload to those galleries will differ, I can see no sense in one install. The overhead caused by having double core files is neglible and not worth the work needed to set this up in the first place. Space get's eaten up by the pics you upload, not by coppermine's core files. After all, there are instructions available for a minimal install (see FAQ), so my recommendation would be to forget about your initial idea and set them up independently.
