Basically I am looking to plunk a coppermine install into an existing website to replace an old integrated emAlbum.
Has anyone done a very basic theme where a guest user view will only show the album level and allow for searching? (and a login link for the admin)
Anyone that can point me in the direction of something similar would be greatly appreciated.

Thanks!

Permissions of a guest are not being determined by a particular theme, nor is the number of menu items subject of a particular theme. Use whatever theme you prefer: a theme is a matter of visual style, not a matter of features. Read board rules and do as suggested there. Read "User-contributed themes" as well. After having picked a theme, use the plugin "final extract" to remove particular menu items. To remove particular permissions for guests, use the groups control panel that is built into coppermine already.
