I'm getting a 500 Internal Server Error when I visit pages on my coppermine gallery such as "Categories" and "Documentation". Is there any way to fix this?

We're not ready to look into issues that are related to the reluctance of users to upgrade: older versions contain bugs that were fixed in later versions (there's a reason why newer versions come out). Running an utterly outdated version and the complaining that things don't work as expected is not a bright idea.

well i'm sorry for not knowing that there was a newer version of coppermine available. anyway, i have updated to the newer version. i'm still having the same problem though.

Well done on updating. Have you fixed the problem now as your site appears to be working fine for me. A 500 server error is usually a problem with the system and not the application installed on it. The only way to be sure is to check the servers error logs and that is something your host will need to do.
It is a mistake to think you can solve any major problems just with potatoes.

Can't replicate your issue: the docs come up fine for me - http://www.montel-porter.org/gallery/docs/ displays without an error message. If your problem persists with the category manager, search the board for the advanced category manager posted by Nibbler that fixes resources consumption issues on some webservers.
