Do you do this by deleting their respective directory inside of the "themes" directory? My apologies for asking a question which I am sure has been asked hunreds of times, but believe it or not I couldn't find a thread doing a search that would answer my question.

Yes, you can just delete the directory. Leave the classic theme for troubleshooting.
