What would a good size to set the User Quota of the gallery

Depends on your overall webspace and some others factors. There simply can not be a general recommendation that makes sense. If you like defaults or totally generic suggestions, use the default that the quota is set to when you install coppermine.
Not related to bridging, moving accordingly.
