My home page currently shows the last uploaded image full size and what I would like to know is whether I can choose any uploaded image to display there rather than it just being the last uploaded.

We're out of crystal balls. So why don't you do as suggested per board rules (you agreed to respect them when signing up) and post a link to your gallery for a start?

As for you problem, I am not familiar with that theme but I am guessing the picture choice is generated by the settings in config here
