When a user wants to change to his email from ' my perfil', he cannot since he does not appear like form, without possibility of changing it

currently the user can't change his email addy, that's true (consider it a feature or a bug, your choice ). You will have to change it for him, using a tool like phpMyAdmin.

No need to use phpmyadmin.
The admin can change users email in usermanager just click on the edit button for that user.

I consider this a good thing.
