I am a newbie to Coppermine & PHP webpages so am not sure how to go about changing to another theme. Sorry to be a pest but can someone give me or point me to a step by step guide to do it.

It's in the config. Just click on the word "Config" or directly visit admin.php with your browser. Maybe you have to clear your cookies to see the change in your browser.
